1 can of BRUNSWICK Seafood Snack herring fillets in hot sauce
4 (6-inch) yellow corn tortillas
4 small lettuce leaves
2 medium size tomatoes
1/4 red onion, chopped
Juice of half lime
1/4 cup chopped cilantro
Salt and pepper to taste
Pinch of ground cumin to taste

Cooking time 10 min
Bring 2 quarts of water to boil. Once the water is boiling, remove the pot from heat, and put the tomatoes in the hot water for 1 minute. Then remove and peel the skin. Cut tomatoes into halves and squeeze out most of the juices and seeds. Finely chop the tomatoes.
In a big bowl, mix all the ingredients except herring fillets, salt, pepper and cumin to taste.
Put one leaf on each tortilla, then one piece of herring fillet and top with mixture. Serve.
