1 can BRUNSWICK® SARDINES in Spring Water, drained and de-boned
1 tsp lime juice
1 pinch of salt
1 pinch of black pepper
½ cup tomato, diced
1 tbsp. red onion, diced
1 tsp parsley, finely chopped
Cut the cucumber into ½ inch height pieces.
Hollow out each piece ¼ inch from the base. Reserve inside pieces for the filling.
Combine the Sardines, lime juice, salt and black pepper.
Add tomato, parsley, red onion, along with the reserved pieces of cucumber.
Combine all ingredients and stuff each cucumber sections.
Garnish with parsley and serve as appetizers for any type of event.
