2 tbsp / 30 mL olive oil
2 tbsp almonds, sliced or slivered
1/3 cup onion, chopped
1/3 cup celery, chopped
1/2 cup mushrooms, sliced, fresh
1 tsp garlic, minced
1 cup long grain brown rice
2 cups / 500 mL low sodium chicken broth
2 tbsp fresh parsley, chopped
1 tbsp red bell pepper, finely chopped

Heat oil in a large saucepan. Add almonds and toast very lightly over medium heat.
Add onion, celery, mushrooms, garlic, rice and chicken broth. Bring to a boil, cover, reduce heat and cook for 25 minutes (or according to rice package directions), until liquid has evaporated.
Gently stir in parsley, red pepper and BRUNSWICK® SEAFOOD SNACKS. Heat through uncovered for an additional 5 minutes.
- Pilaf is long grain rice cooked with vegetables in a broth (1 part rice & 2 parts liquid) on medium heat, covered and left to simmer until the liquid is completely evaporated.
- Use a sprig of rosemary and green beans as garnish, if you desire.
